Hello daughters of grace!
I’m finally home from Europe and I’m so happy to be back on US soil! Traveling is amazing but there is just something about sleeping in your own bed in your own home. More about my trip later. It’s almost Valentine’s Day!! For some people Valentine’s Day sparks feelings of happiness and all things red! For others it causes despair and sadness. (If this is the case for you read my previous blog on loneliness here.) Whatever your situation is allow Valentines Day to be a day of joy for you! No matter what, God loves you! During my time in Europe I read through Song of Solomon and there is so much love in there I can hardly contain my joy!
“You are altogether beautiful, my darling. And there is no blemish on you.” ~ Song of Solomon 4:7

Don’t you just feel the love? The Lord is our first love! Remember that and celebrate it everyday! Be reminded that YOU, His beloved, are loved, faults and all. Through His blood there is no blemish on you! WOW! Hallelujah! Read that book and feel the love!
I’m going to share with you one of my of my favorite, full-proof and most requested recipes for this special day. My Bourbon Chicken recipe! It’s sure to make everyone happy but not ruin your healthy eating plan. It can be for your family meal, that “special person” meal or just a meal with you and the Lord! Enjoy sis!

Chef Robin's Bourbon Chicken
Servings: 4
Amount Measure Ingredient -- Preparation Method
2 pounds Boneless skinless chicken breast or thighs, cut into chunks
1 tablespoon Olive oil
1 clove Garlic
1/4 teaspoon Ginger
3/4 teaspoon Red Pepper flakes
1/4 cup Apple Juice
1/3 cup Light Brown Sugar
2 tablespoons Ketchup
1 tablespoon Cider vinegar
1/2 cup Water
1/3 cup Light soy sauce
Heat oil in a large skillet.
Add chicken pieces and cook until lightly browned. Remove chicken.
Add remaining ingredients, heating over medium Heat until well mixed and dissolved.
Add chicken and bring to a hard boil. Reduce heat and simmer for 20 minutes.
Serve over hot rice and veggies and ENJOY.
